  • 4 cups low-sodium vegetable broth
  • 4 cups fresh spinach
  • 1 medium onion, chopped
  • 3 garlic cloves, minced

  • 1 teaspoon cumin powder
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until the water runs clear. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Stir in minced garlic for another minute.
  3. Add rinsed lentils and vegetable broth to the pot; bring to a boil, then reduce heat and let simmer for about 20 minutes until lentils are tender.
  4. Stir in fresh spinach and cumin; season with salt and pepper as desired. Simmer for an additional 10 minutes.
