Description

Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
  2. Add minced garlic, cumin, and coriander; cook for another 1-2 minutes until fragrant.
  3. Stir in rinsed lentils and diced tomatoes with their juices.
  4. Pour in the vegetable broth and add bay leaves. Bring to a boil, then reduce heat and let simmer for about 30 minutes.
  5. Remove bay leaves, taste, and adjust seasoning as needed. Serve hot with fresh herbs if desired.
