- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp coriander
- 2 bay leaves
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
- Add minced garlic, cumin, and coriander; cook for another 1-2 minutes until fragrant.
- Stir in rinsed lentils and diced tomatoes with their juices.
- Pour in the vegetable broth and add bay leaves. Bring to a boil, then reduce heat and let simmer for about 30 minutes.
- Remove bay leaves, taste, and adjust seasoning as needed. Serve hot with fresh herbs if desired.
