Ingredients

Scale
  • 4 cups fresh cucumbers, sliced
  • 1 cup white vinegar
  • 1 cup filtered water
  • 3 tbsp coarse sea salt
  • 2 tbsp cane sugar
  • 4 sprigs fresh dill
  • 4 garlic cloves, smashed
  • 1 tbsp mustard seeds

Instructions

  1. Wash cucumbers under cool water; trim ends and slice into spears or rounds.
  2. In a saucepan over medium heat, combine white vinegar, water, sea salt, and cane sugar. Stir until dissolved and bring to a gentle simmer for about 5 minutes.
  3. Remove from heat; add dill sprigs, smashed garlic cloves, and mustard seeds. Let steep while cooling.
  4. Sterilize glass jars by boiling them briefly in water. Pack cucumbers into jars and pour cooled brine over them, ensuring they are fully submerged.
  5. Seal jars tightly with lids and allow to cool at room temperature before refrigerating. Wait at least 24 hours for flavors to develop.
