Description

Ingredients

  • 1½ cups crushed graham crackers
  • ½ cup unsalted butter (melted)
  • ¾ cup granulated sugar
  • 16 ounces cream cheese (softened)
  • 1 cup sour cream
  • 1 cup fresh blackberries
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a springform pan.
  2. In a bowl, mix crushed graham crackers, melted butter, and sugar until combined. Firmly press into the bottom of the pan.
  3. Bake the crust for 10 minutes until golden brown; allow it to cool.
  4. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
  5. Add eggs one at a time, followed by sour cream, lemon juice, and vanilla extract; blend until smooth.
  6. Gently fold in fresh blackberries and pour the mixture over the cooled crust.
  7. Bake for 50-60 minutes until set but slightly wobbly in the center. Gradually cool in the oven with the door ajar, then refrigerate for at least four hours or overnight before serving.
