Ingredients

Scale
  • 1 lb flank or sirloin steak, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 cup queso cheese (fresh cheddar or pre-made dip)
  • 1 cup bell peppers, diced (red, yellow, or green)
  • 1 medium onion, diced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your ingredients by chopping the steak, dicing the onion and bell peppers, and measuring out all components.
  2. Cook the rice: In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer until absorbed (15-20 minutes).
  3. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add steak pieces and cook until browned on all sides (5-7 minutes). Remove from skillet.
  4. Sauté vegetables: In the same skillet, add onions and bell peppers; sauté until soft (4-5 minutes). Stir in spices.
  5. Combine: Return steak to skillet with vegetables; pour in queso cheese and stir until melted (3-4 minutes). Fold in cooked rice until well combined and heated through.
