  • 6 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • ½ cup sour cream (optional)
  • 1 medium onion, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 cup tomato sauce
  • 2 tsp cumin
  • 2 tsp chili powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté chopped onions until translucent. Add ground beef and cook until browned, about 7-10 minutes.
  3. Stir in cumin, chili powder, and tomato sauce; simmer for 5 minutes.
