Description

Carrot halwa, a luscious Indian dessert, features tender grated carrots simmered in creamy milk with aromatic spices. This delightful treat is perfect for celebrations or cozy evenings.


Ingredients

  • 45 large fresh carrots, grated
  • 4 cups whole milk
  • 1 cup granulated sugar
  • 3 tablespoons ghee (clarified butter)
  • ½ teaspoon cardamom powder
  • ¼ cup chopped almonds and cashews (optional)
  • Raisins (optional)

Instructions

  1. Peel and grate the carrots until they resemble bright orange confetti.
  2. In a heavy-bottomed pan, melt ghee over medium heat. Add grated carrots and sauté for about 10 minutes until softened.
  3. Pour in whole milk and bring to a gentle boil. Stir occasionally, cooking for 20-25 minutes until thickened.
  4. Add sugar, stirring until dissolved while enjoying the sweet aroma.
  5. Mix in cardamom powder, chopped nuts, and raisins (if using). Cook for an additional 5 minutes.
  6. Serve warm or refrigerate for later enjoyment.
