  • 2 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup carrots, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, grated
  • 2 green onions, chopped
  • 1 tbsp honey or brown sugar
  • 1 tsp cornstarch
  • 2 tbsp water

Instructions

  1. Slice chicken breasts into bite-sized pieces. Chop bell peppers, broccoli, and carrots.
  2. In a bowl, mix soy sauce, honey (or brown sugar), minced garlic, grated ginger, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
  3. Heat sesame oil in a large skillet over medium-high heat. Add marinated chicken and cook for about 5-7 minutes until golden brown.
  4. Stir in chopped vegetables and cook for an additional 4-5 minutes until tender-crisp.
  5. Whisk together remaining marinade ingredients with water; pour over stir-fry while stirring until thickened (about 2 minutes). Serve hot over rice or noodles.
