  • 1 ½ tsp baking soda
  • 2 cups granulated sugar
  • 3 large eggs (room temperature)
  • 1 cup whole milk
  • ½ cup unsalted butter (softened)
  • 2 tsp vanilla extract
  • 1 cup dark chocolate (for ganache)
  • ½ cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sugar.
  3. In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually combine dry ingredients with wet ingredients, alternating with milk until just mixed.
  5. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. For the ganache, heat heavy cream until simmering, pour over chopped dark chocolate, and stir until smooth.
  7. Once cakes are cool, layer with ganache between the cakes and cover the top with additional ganache.
