- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup fresh strawberries, mashed
- 2 tbsp gelatin powder
- 1 cup heavy whipping cream
Instructions
- Preheat the oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until well combined. Stir in vanilla extract and sour cream until blended.
- Whip heavy cream in another bowl until stiff peaks form. Fold whipped cream into the cream cheese mixture gently.
- In a saucepan over medium heat, combine fresh strawberries and sugar until juicy; mash slightly to create a sauce.
- Pour half of the cheesecake filling over the cooled crust, drizzle with half of the strawberry sauce, and swirl gently. Repeat with remaining filling and sauce.
- Bake at 325°F (160°C) for about 60 minutes or until set but slightly jiggly in the center. Cool completely and refrigerate for at least four hours before serving.
