Description

Delight in this creamy, marbled strawberry swirl cheesecake, perfect for any celebration or a sweet indulgence at home.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup fresh strawberries, mashed
  • 2 tbsp gelatin powder
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until well combined. Stir in vanilla extract and sour cream until blended.
  3. Whip heavy cream in another bowl until stiff peaks form. Fold whipped cream into the cream cheese mixture gently.
  4. In a saucepan over medium heat, combine fresh strawberries and sugar until juicy; mash slightly to create a sauce.
  5. Pour half of the cheesecake filling over the cooled crust, drizzle with half of the strawberry sauce, and swirl gently. Repeat with remaining filling and sauce.
  6. Bake at 325°F (160°C) for about 60 minutes or until set but slightly jiggly in the center. Cool completely and refrigerate for at least four hours before serving.
