- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs, room temperature
- 2 tsp vanilla extract
- 2 tbsp instant coffee powder
- ½ cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8-inch pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of the pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and coffee powder until fully combined.
- Pour the filling over the crust and bake for 30-35 minutes until the center is slightly jiggly.
- Allow to cool completely before drizzling with caramel sauce. Chill in the refrigerator for at least 2 hours before cutting into bars.
