Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 garlic cloves, minced
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried oregano (or 1 tbsp fresh)
  • 1 tsp dried thyme (or 1/2 tbsp fresh)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  2. Crumble half of the feta cheese into the marinade and stir gently.
  3. Add the chicken breasts to the bowl and coat thoroughly with the marinade.
  4. Cover and marinate in the fridge for at least 30 minutes (up to overnight).
  5. Preheat your oven to 375°F (190°C). Lightly grease a baking dish and transfer the marinated chicken.
  6. Top with remaining feta cheese and bake for 25-30 minutes until golden brown and juices run clear.
  7. Allow to rest for a few minutes before serving.
