- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 4 oz cream cheese, softened
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook chicken breasts in a skillet over medium heat for 15-20 minutes until fully cooked. Allow cooling, then shred into bite-sized pieces.
- In the same skillet, heat olive oil and sauté minced garlic and chopped onion until translucent (about 5 minutes).
- In a large bowl, combine shredded chicken, sautéed mixture, cream cheese, panko breadcrumbs, beaten eggs, parsley, salt, and pepper. Mix until well combined.
- Shape the mixture into patties about ½ inch thick. If too soft to form easily, add more breadcrumbs.
- Heat additional olive oil in the skillet over medium-high heat; cook each patty for about 4-5 minutes on each side until golden brown.
- Serve warm with your favorite dipping sauce or salad.
