  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium sweet onion, finely chopped
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 4 oz cream cheese, softened
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook chicken breasts in a skillet over medium heat for 15-20 minutes until fully cooked. Allow cooling, then shred into bite-sized pieces.
  2. In the same skillet, heat olive oil and sauté minced garlic and chopped onion until translucent (about 5 minutes).
  3. In a large bowl, combine shredded chicken, sautéed mixture, cream cheese, panko breadcrumbs, beaten eggs, parsley, salt, and pepper. Mix until well combined.
  4. Shape the mixture into patties about ½ inch thick. If too soft to form easily, add more breadcrumbs.
  5. Heat additional olive oil in the skillet over medium-high heat; cook each patty for about 4-5 minutes on each side until golden brown.
  6. Serve warm with your favorite dipping sauce or salad.
