- ¼ cup brown sugar
- 2 large eggs
- ⅓ cup vegetable oil
- ½ cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs with both sugars until smooth; add pumpkin puree and vegetable oil, mixing well.
- Gently fold the wet mixture into the dry ingredients until just combined (lumps are okay).
- If desired, fold in chocolate chips or nuts.
- Line muffin tin with paper liners and fill each cup about two-thirds full with batter.
- Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
