  • 2 lbs Yukon Gold potatoes
  • 4 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh rosemary or thyme, chopped

Instructions

  1. Wash and cut the Yukon Gold potatoes into halves or quarters.
  2. Boil the potatoes in salted water for 15-20 minutes until tender.
  3. Drain and return the potatoes to the pot; smash them gently with a potato masher.
  4. Drizzle with olive oil, add minced garlic, salt, pepper, and herbs; mix well.
  5. Preheat the oven to 450°F (230°C) and spread the smashed potatoes on a baking sheet lined with parchment paper.
