- 1. Boil the Potatoes: Place the small Yukon Gold potatoes in a large pot, cover with cold water, add a pinch of salt, and boil for 15-20 minutes until fork-tender.

- 3. Cool & Smash: Drain the potatoes and let them cool for 5 minutes. On a parchment-lined baking sheet, gently smash each potato until about half an inch thick.
