  • 1 tsp sea salt
  • ½ tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 2 tbsp chopped fresh rosemary or thyme

Instructions

  1. 1. Boil the Potatoes: Place the small Yukon Gold potatoes in a large pot, cover with cold water, add a pinch of salt, and boil for 15-20 minutes until fork-tender.
  2. 2. Preheat Oven: While the potatoes are boiling, preheat your oven to 425°F (220°C).
  3. 3. Cool & Smash: Drain the potatoes and let them cool for 5 minutes. On a parchment-lined baking sheet, gently smash each potato until about half an inch thick.
  4. 4. Season: Drizzle olive oil over each smashed potato and sprinkle with salt, pepper, garlic powder, and fresh herbs.
  5. 5. Bake: Roast in the oven for 20-25 minutes or until golden brown and crispy.
