  • 1 cup queso blanco
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • Cilantro (optional, for garnish)

Instructions

  1. Prepare your ingredients by chopping vegetables and slicing the flank steak into thin strips.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the flank steak for 3-4 minutes per side until browned; remove from skillet.
  3. In the same skillet, sauté chopped onions and bell peppers for about 5 minutes until softened.
  4. Stir in minced garlic and rice; toast for 1 minute until fragrant.
