- 4 large bell peppers
- 1 cup halal cheese (mozzarella or cheddar)
- 1 lb halal ground beef or turkey
- 1 cup cooked rice (white or brown)
- 1 cup tomato sauce (low-sodium if preferred)
- 2 tsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp fresh basil (or to taste)
- Salt and pepper to taste
- ¼ cup pine nuts, toasted (optional)
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, warm olive oil. Sauté chopped onions and garlic until translucent (about 5 minutes).
- Add ground meat to the skillet; cook until browned. Season with salt, pepper, oregano, and basil.
- Mix in cooked rice and tomato sauce; simmer for 3–4 minutes.
- Stuff each bell pepper with the mixture and place upright in a baking dish lined with tomato sauce. Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle with halal cheese, and bake uncovered for another 10–15 minutes until bubbly.
