- 1 cup mashed sweet potatoes
- 1 ½ cups all-purpose flour
- ¾ cup brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 2 large eggs
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup milk (dairy or non-dairy)
Instructions
- Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast for about 45 minutes until soft.
- In a large bowl, mash the roasted sweet potatoes. Mix in brown sugar, eggs, vegetable oil, milk, and vanilla until combined.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually fold into the wet ingredients until just mixed.
- Line a muffin tin with liners and fill each cup about three-quarters full with batter.
- Bake for 18-20 minutes until the tops spring back when gently pressed. Cool for five minutes before transferring to wire racks.
