Ingredients

  • 1 cup strong brewed coffee
  • 2 tablespoons rum or coffee liqueur (optional)
  • 3 large egg yolks
  • ½ cup granulated sugar
  • 1 cup mascarpone cheese
  • 2 large egg whites
  • 24 crisp ladyfingers
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Brew coffee and let it cool slightly; mix in rum if desired.
  2. In a bowl, beat egg yolks with sugar until pale. Fold in mascarpone until smooth.
  3. In another bowl, whip egg whites to stiff peaks. Gently fold into mascarpone mixture.
  4. Quickly dip ladyfingers in coffee mixture and layer in a dish. Spread half of the mascarpone cream over them.
  5. Repeat layers with remaining ladyfingers and cream. Dust with cocoa powder.
  6. Chill in the refrigerator for at least 4 hours before serving.
