- 1 cup strong brewed coffee

- 3 large egg yolks
- ½ cup granulated sugar
- 1 cup mascarpone cheese
- 2 large egg whites
- 24 crisp ladyfingers
- ¼ cup unsweetened cocoa powder
Instructions
- Brew coffee and let it cool slightly; mix in rum if desired.
- In a bowl, beat egg yolks with sugar until pale. Fold in mascarpone until smooth.
- In another bowl, whip egg whites to stiff peaks. Gently fold into mascarpone mixture.
- Quickly dip ladyfingers in coffee mixture and layer in a dish. Spread half of the mascarpone cream over them.
- Repeat layers with remaining ladyfingers and cream. Dust with cocoa powder.
- Chill in the refrigerator for at least 4 hours before serving.
