Tomato soup is a comforting dish that warms the soul. This easy, homemade tomato soup combines ripe tomatoes, aromatic herbs, and spices for a velvety texture and rich flavor. With just a few simple ingredients, you can create a bowl of deliciousness that’s perfect for chilly days or cozy gatherings. Top it with croutons or fresh basil for an extra touch of flair!

Ingredients

Scale
  • 4 cups ripe tomatoes, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • ½ cup fresh basil leaves, shredded
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  2. Stir in chopped tomatoes and vegetable broth. Season with salt, pepper, and sugar. Bring to a simmer and cook uncovered for 20-25 minutes.
  3. Blend the mixture until smooth using an immersion blender or traditional blender (let cool slightly first).
  4. Stir in shredded basil leaves just before serving. Garnish with optional toppings like croutons.
