  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh carrots, chopped
  • 2 cups celery stalks, chopped
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 8 oz egg noodles
  • 8 cups low-sodium chicken broth
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon (optional)

Instructions

  1. Chop all vegetables into bite-sized pieces.

  3. Add the chicken breasts and pour in enough broth to cover by an inch. Bring to a gentle simmer.
  4. Incorporate carrots and celery followed by egg noodles. Cook for about 10 minutes until noodles are tender.
  5. Season with salt, pepper, thyme, and parsley; let simmer for an additional five minutes.
  6. Just before serving, stir in lemon juice for added brightness.
