Ingredients

Scale
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp mint extract
  • 2 cups chocolate chips
  • green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy (about 2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in mint extract and optional food coloring until combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Gently fold in chocolate chips using a spatula.
  6. Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  7. Allow cooling slightly before transferring to wire racks to fully cool.
