Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

- Add eggs one at a time, mixing well after each addition. Stir in mint extract and optional food coloring until combined.

- Gently fold in chocolate chips using a spatula.
- Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
- Allow cooling slightly before transferring to wire racks to fully cool.
