Ingredients

  • 2 ripe tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 100g feta cheese
  • 100g Kalamata olives
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano

Instructions

  1. 1. Wash and chop tomatoes into bite-sized pieces; slice cucumber into half-moons.
  2. 2. Thinly slice half of the red onion; soak in cold water to mellow the flavor if desired.
  3. 3. In a large bowl, combine tomatoes, cucumbers, red onion, and Kalamata olives. Crumble feta cheese over the top.
