  • 1 medium onion, finely chopped
  • 1 medium carrot, grated
  • 1 celery stalk, diced
  • 3 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes
  • ½ cup red wine
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. In a large skillet over medium heat, warm olive oil and sauté chopped onion until translucent. Add grated carrot and diced celery; cook until softened.
  2. Increase heat slightly and add ground beef. Cook until browned, breaking apart with a spoon.
  3. Stir in minced garlic along with oregano and basil; sauté briefly until fragrant.
  4. Add crushed tomatoes and red wine to the skillet. Simmer gently for at least 30 minutes, stirring occasionally.
