- 2 lbs Beef Chuck Roast
- 1 medium Onion
- 4 cloves Garlic
- 2 tsp Cumin
- 2 tsp Chili Powder
- 1/4 cup Lime Juice
- Corn or Flour Tortillas
- Fresh Cilantro and Lime Wedges for Topping
Instructions
- Chop the onion and mince the garlic.
- Heat oil in a large pot over medium-high heat and sear the chuck roast for about 4-5 minutes on each side until browned.
- Add chopped onions and minced garlic to the pot, cooking for an additional 2 minutes until fragrant.
- Sprinkle cumin and chili powder over the beef, stirring to coat evenly.
- Pour in enough water or broth to cover half of the roast, bring to a simmer, then reduce heat to low and cover. Cook for about 3 hours until the beef is tender.
- Remove the beef from heat and shred it using two forks right in the pot. Mix thoroughly before serving with warm tortillas and desired toppings.
