Ingredients

  • 2 lbs Beef Chuck Roast
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 tsp Cumin
  • 2 tsp Chili Powder
  • 1/4 cup Lime Juice
  • Corn or Flour Tortillas
  • Fresh Cilantro and Lime Wedges for Topping

Instructions

  1. Chop the onion and mince the garlic.
  2. Heat oil in a large pot over medium-high heat and sear the chuck roast for about 4-5 minutes on each side until browned.
  3. Add chopped onions and minced garlic to the pot, cooking for an additional 2 minutes until fragrant.
  4. Sprinkle cumin and chili powder over the beef, stirring to coat evenly.
  5. Pour in enough water or broth to cover half of the roast, bring to a simmer, then reduce heat to low and cover. Cook for about 3 hours until the beef is tender.
  6. Remove the beef from heat and shred it using two forks right in the pot. Mix thoroughly before serving with warm tortillas and desired toppings.
