  • 6 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers (any color)
  • 1 cup cooked sausage or bacon, chopped
  • ½ cup salsa
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a nonstick skillet over medium heat. Add diced bell peppers and sauté until softened.
  2. In a bowl, whisk the eggs with salt and pepper. Pour into the skillet with vegetables and cook until fluffy but slightly runny.
