  • 4 medium sweet potatoes (about 1.5 lbs)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup grated cheddar cheese (or dairy-free alternative)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in them with a fork. Bake on a parchment-lined baking sheet for 45-60 minutes until tender.
  2. In a skillet over medium heat, combine black beans, corn, cumin, and chili powder. Cook until heated through.
  3. In a bowl, mix the warm bean mixture with cheese and sour cream/yogurt until well blended.
  4. Slice baked sweet potatoes lengthwise and fluff insides with a fork. Stuff with the filling mixture.
  5. Top with additional cheese if desired and return to the oven for an additional 10 minutes until heated through.
  6. Garnish with cilantro before serving.
