Ingredients

  • 2 cups raw apple cider vinegar
  • 1 cup fresh ginger, chopped
  • 1 cup garlic cloves, chopped
  • 1 cup hot peppers (jalapeños or habaneros), sliced
  • ½ cup honey (optional)
  • Zest of 1 lemon

Instructions

  1. Peel and chop ginger and garlic into small pieces. Slice hot peppers while wearing gloves.
  2. In a large mason jar, combine chopped ginger, garlic, hot peppers, and lemon zest.
  3. Pour apple cider vinegar over the mix until fully submerged.
  4. Seal the jar tightly and shake well. Store in a cool dark place for 2-4 weeks, shaking occasionally to infuse flavors.
  5. After steeping, strain the mixture through cheesecloth or a fine mesh strainer into another container, squeezing out excess liquid.
