  • 1 cup long-grain basmati or jasmine rice
  • 2 cups water
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 tablespoon curry leaves
  • 1 tablespoon green chilies, chopped
  • ½ teaspoon turmeric powder
  • ¼ cup roasted peanuts
  • 2 tablespoons fresh lemon juice
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the rice until the water runs clear to remove excess starch. Cook in 2 cups of water until fluffy (about 15-20 minutes). Allow to cool.
  2. In a skillet, heat oil over medium heat. Add mustard seeds and let them pop.
  3. Stir in curry leaves and green chilies, sauté for another minute. Add turmeric powder and mix well.
  4. Gently fold in the cooked rice, drizzle with fresh lemon juice, and season with salt.
  5. Add roasted peanuts, mix gently to combine, and garnish with fresh cilantro before serving.
