Ingredients

  • 1 cup mascarpone cheese
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • 1/2 cup strong brewed coffee, cooled
  • 1 cup heavy cream
  • Pinch of salt

Instructions

  1. Brew coffee and allow it to cool completely.
  2. In a mixing bowl, combine mascarpone cheese, sugar, lemon juice, and lemon zest until smooth.
  3. In another bowl, whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
  4. Dip each ladyfinger briefly into the cooled coffee and layer them in a serving dish.
  5. Alternate layers of soaked ladyfingers and mascarpone mixture until filled.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Before serving, garnish with additional lemon zest.
