  • 8 oz rotini pasta
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, chopped
  • 15 oz can tomato sauce
  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente (about 8-10 minutes). Drain and set aside.
  2. In a large skillet over medium heat, heat 1 tbsp oil. Sauté chopped onions and bell peppers for about 5 minutes until soft.
  3. Add ground beef to the skillet, cooking until browned (6-8 minutes). Stir in taco seasoning.
  4. Mix cooked pasta with the beef mixture and add tomato sauce, combining well for about 2-3 minutes.
  5. Remove from heat and fold in shredded cheddar cheese until melted. Serve with a dollop of sour cream or Greek yogurt.
