  • 1/2 cup uncooked rice
  • 1/4 cup fresh parsley (chopped)
  • 3 garlic cloves (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 2 carrots (chopped)
  • 1 zucchini (chopped)
  • 6 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather and chop all ingredients before starting.
  2. In a large bowl, mix ground beef, rice, minced garlic, parsley, cumin, paprika, salt, and pepper until well combined.
  3. Shape mixture into small meatballs (about 1 inch in diameter) and set aside.
  4. Heat olive oil in a large pot over medium heat; sauté chopped onions until translucent.
  5. Add carrots and zucchini; sauté for an additional 4–5 minutes until softened.
  6. Pour in chicken broth and diced tomatoes; stir to combine.
  7. Gently add meatballs to the pot and simmer on low heat for about 30 minutes until cooked through.
