Ingredients

Scale
  • 1 cup long grain rice
  • 1 can (15 oz) low-sodium black beans
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp ground cumin
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, warm olive oil. Add chopped onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and cumin; cook for an additional 1-2 minutes until fragrant.
  4. Add rinsed rice and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 18-20 minutes until liquid is absorbed.
  5. Meanwhile, drain black beans and warm them in a separate pan over medium heat. Mix in lime juice, cilantro, and season to taste.
  6. Once rice is cooked, fluff it with a fork then gently fold in the seasoned black beans.
