- 1 medium spaghetti squash
- 1 lb lean ground turkey
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- 2 cups fresh baby spinach
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil, season with salt and pepper, then place cut-side down on a baking sheet.
- Roast the spaghetti squash for about 40 minutes until fork-tender. The skin should be lightly browned.
- While the squash roasts, heat olive oil in a skillet over medium heat. Sauté diced onions and minced garlic until translucent. Add ground turkey and cook until browned (about 5-7 minutes).
- Stir in marinara sauce, spinach, and Italian seasoning; simmer for about 5 minutes.
- Once the spaghetti squash is cool enough to handle, scrape out strands into a large bowl. Fold in the turkey mixture and half of the shredded cheese.
- Transfer to a greased baking dish, top with remaining cheese, and bake at 350°F (175°C) for about 25 minutes or until bubbly.
