  • 6 medium fresh apples (mix of Honeycrisp and Granny Smith), quartered
  • 34 cinnamon sticks
  • 10 whole cloves
  • 1/2 cup brown sugar (adjust for sweetness)
  • 1/4 tsp freshly grated nutmeg
  • 2 tbsp lemon juice

Instructions

  1. Wash and quarter the apples; do not peel.
  2. In a large pot, combine the quartered apples and water; ensure water covers the apples.
  3. Add cinnamon sticks, whole cloves, nutmeg, and lemon juice to the pot.
  4. Bring to a boil over medium-high heat, then reduce to low and simmer covered for 2 hours.
  5. After simmering, mash the mixture with a potato masher to release juices.
  6. Strain the cider through a fine mesh strainer or cheesecloth into another pot or pitcher.
  7. Adjust sweetness with brown sugar as desired.
