  • 2 medium Yukon gold potatoes, diced
  • 2 stalks celery, chopped
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the seasoned beef chuck roast in a splash of oil for about 5-7 minutes until golden.
  2. Add the chopped onions and minced garlic; sauté for 3 minutes until translucent.
  3. Stir in the carrots, celery, and Yukon gold potatoes; cook for an additional 5 minutes.
  4. Pour in the diced tomatoes (with juice) and beef broth; scrape the bottom of the pot to release browned bits.
  5. Add thyme sprigs and bay leaves; bring to a simmer and cook on low heat for 1-2 hours until beef is tender.
  6. Remove herb stems and bay leaves before serving; adjust seasoning as needed.
