  • 2 cups spinach or kale, roughly chopped

Instructions

  1. Prep your ingredients by washing and chopping the vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent. Add minced garlic and cook until fragrant (about 1 minute).
  3. Stir in carrots, potatoes, zucchini, and any additional veggies you prefer; cook for about 5 minutes until slightly softened.
