Ingredients

  • 2 lbs starchy potatoes (e.g., Russets)
  • 1 cup chopped kale or cabbage
  • 4 scallions, thinly sliced
  • 4 tbsp unsalted butter
  • ½ cup whole milk or heavy cream
  • Salt and pepper to taste

Instructions

  1. Peel and cut the potatoes into even chunks, then rinse under cold water.
  2. Boil the potato chunks in salted water until fork-tender (15-20 minutes).
  3. Meanwhile, sauté kale or cabbage and scallions in butter over medium heat until wilted (5-7 minutes).
  4. Drain the potatoes, return them to the pot, and mash until smooth.
  5. Stir in butter and milk (or cream) gradually to achieve desired creaminess.
