  • 2 medium Yukon Gold potatoes, diced
  • 4 slices bacon, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 4 cups low-sodium vegetable broth
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon but leave the drippings in the pot.
  2. Add the chopped onions and minced garlic to the pot, sautéing until onions are translucent (about 5 minutes).
  3. Stir in the diced potatoes and corn kernels, cooking for another 3 minutes.
  4. Pour in vegetable broth to cover the ingredients by about an inch. Bring to a boil, then reduce heat and simmer until potatoes are tender (15-20 minutes).
  5. Stir in heavy cream along with thyme, salt, and pepper. Let simmer for another 10 minutes until slightly thickened.
  6. Mix back in the crispy bacon bits before serving hot.
