- 1 cup dried chickpeas (soaked overnight) or 1 can (15 oz) chickpeas (drained and rinsed)
- 1/2 cup fresh parsley (finely chopped)
- 1/4 cup fresh cilantro (finely chopped)
- 3 garlic cloves (minced)
- 1 small yellow onion (finely chopped)
- 2 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp baking powder
- Salt and pepper to taste
- Oil for frying (enough to submerge half the falafel)
Instructions
- If using dried chickpeas, soak them overnight in water. Drain and rinse before use.
- In a food processor, combine soaked or canned chickpeas, parsley, cilantro, garlic cloves, onion, cumin powder, coriander powder, baking powder, salt, and pepper. Pulse until coarsely blended.
- Form the mixture into balls or patties using slightly wet hands to prevent sticking.
- Heat oil in a deep frying pan over medium-high heat until it reaches about 350°F.
- Fry the falafel in batches until golden brown on all sides—approximately 3-4 minutes per side.
- Remove with a slotted spoon and drain on paper towels. Serve warm with tahini sauce or inside pita bread with fresh veggies.
