- 4 boneless, skinless chicken breasts (about 1 lb)
- 2 medium sweet potatoes (about 1 lb), peeled and diced
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 4 cups fresh spinach or kale
- 1 ripe avocado, sliced
- Juice of 1 lemon
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes in 1 tablespoon olive oil, garlic powder, salt, and pepper. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown.
- Season chicken breasts with salt and pepper. In a skillet over medium heat, add remaining olive oil and cook chicken for about 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from skillet; add spinach or kale to wilt using residual heat.
- Slice avocado while chicken cooks.
