- 1 cup quinoa
- 2 cups water
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, finely sliced
- ¾ cup crumbled feta cheese
- ½ cup pitted Kalamata olives, halved
- ¼ cup fresh parsley or mint, chopped
- Juice of 1 lemon
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium heat then reduce heat to low, cover tightly, and simmer for about 15 minutes until water is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and spread on a baking sheet to cool completely.
- While quinoa cools, prepare vegetables: dice cucumber, halve cherry tomatoes, and finely slice red onion.
- In a large bowl, combine cooled quinoa with cucumber, tomatoes, onion, feta cheese, olives, and herbs. Toss gently.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over salad and toss again.
- Allow salad to sit for at least 30 minutes before serving for flavors to meld.
