- 2 large eggs
- 1 medium sweet onion, sliced
- 2 cups short-grain rice (uncooked)
- 3 tbsp low-sodium soy sauce
- 1 tsp sugar
- 2 tbsp mirin (optional)
- 1 cup panko breadcrumbs
- 1/2 cup vegetable oil (for frying)
Instructions
- Rinse the rice under cold water until it runs clear. Cook according to package instructions.
- Preheat a frying pan over medium heat and add enough oil to cover the bottom.
- Dip each pork cutlet in flour, then beaten eggs, and finally coat with panko breadcrumbs.
- Fry each cutlet for 4-5 minutes per side until golden brown and crispy. Let rest briefly.
- In another pan, sauté sliced onions until translucent, then add soy sauce, sugar, mirin, and water. Simmer gently.
- Gently slide the fried cutlets into the sauce and crack eggs over them. Cover for 3-4 minutes until eggs are softly cooked.
- Serve by spooning cooked rice into bowls and topping with saucy cutlets. Drizzle extra sauce on top and garnish with green onions.
