  • 2 fresh salmon fillets (6 oz each)
  • 1 cup brown rice or quinoa
  • 1 medium cucumber, thinly sliced
  • 1 ripe avocado, cubed
  • 1 medium carrot, shredded
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp sesame oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the brown rice or quinoa according to package instructions; set aside.
  2. Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Cook salmon skin-side down for 4-5 minutes until crispy.
  3. Flip the salmon gently and pour soy sauce mixed with sesame oil and lime juice over it. Cook for an additional 3-4 minutes until done.
  4. Slice cucumbers, shred carrots, and cube avocado while the salmon cooks.
  5. Assemble your bowls: place grains at the bottom, top with glazed salmon, and arrange veggies on top.
  6. Drizzle with extra soy sauce or lime juice if desired. Sprinkle sesame seeds on top for added crunch.
