  • 2 cups cooked short-grain rice
  • 1 cup julienned carrots
  • 1 cup sliced zucchini
  • 1 cup bean sprouts
  • 1 cup spinach
  • 1 cup bulgogi beef or cubed tofu
  • 1 large egg
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp gochujang (adjust to taste)
  • 2 tsp sesame oil
  • 1 tbsp sesame seeds

Instructions

  1. Cook the rice according to package instructions, fluff with a fork, and set aside.
  2. Heat sesame oil in a pan over medium heat. Sauté carrots and zucchini for about 3-4 minutes until slightly tender.
  3. Add bulgogi beef or tofu to the pan and cook until golden brown.
  4. In a separate skillet, fry the egg until the whites are set and the yolk remains runny.
  5. In serving bowls, layer the rice at the base, arrange sautéed vegetables and protein around it, and top with the fried egg.
  6. Drizzle soy sauce and gochujang on top, then sprinkle with sesame seeds before serving.
