- 1 lb bone-in chicken thighs
- 1 lb shrimp, peeled and deveined
- 1 cup okra, sliced (fresh or frozen)
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 1 cup celery, chopped
- 14 oz canned diced tomatoes
- 2 tbsp Cajun seasoning
- 4 cups low-sodium chicken broth
- 1/2 cup flour
Instructions
- Heat a large pot over medium heat. Add sliced Andouille sausage and sauté until browned (about 5 minutes).
- Stir in the chopped bell pepper, onion, and celery. Cook until softened (about another 5 minutes).
- Gradually sprinkle in the flour while stirring continuously to create a roux. Cook until it turns deep brown (10–15 minutes), being careful not to burn it.
- Pour in the chicken broth and add canned tomatoes and Cajun seasoning. Bring to a boil, then reduce to a simmer.
- Add chicken thighs and okra; simmer for 30–40 minutes until chicken is tender.
- Five minutes before serving, stir in shrimp until pink and cooked through.
