- 3 egg whites (for meringue)
- 3/4 cup granulated sugar (for meringue)
- 1 tsp cornstarch
- 1 tsp lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, and salt. Mix well.
- Add eggs, milk, vegetable oil, and vanilla; mix until just combined.
- Pour batter into the pan and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
- While cooling, beat egg whites until frothy; gradually add sugar until glossy peaks form.
- Fold in cornstarch and lemon juice. Spread softened ice cream over the cooled cake before covering with meringue.
- Bake at 450°F (232°C) for about 3–5 minutes until meringue is golden brown.
