Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, whisk together eggs, sugar, oil, milk, and vanilla until smooth.
  4. Gradually fold the wet ingredients into the dry mixture until just combined—lumps are okay!
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring them to wire racks to cool completely.
  7. For frosting, beat peanut butter and cream cheese (if using) until creamy. Gradually add powdered sugar until smooth; adjust consistency with milk if needed.
  8. Assemble by placing one layer on a plate, spreading frosting on top before adding the second layer; frost the top and sides evenly.
