Ingredients
- 1 medium spaghetti squash
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 (14.5 oz) can crushed tomatoes
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the cut sides and season with salt and pepper.
- Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 30-40 minutes until tender.
- While roasting, heat olive oil in a pan over medium heat, sauté garlic for 1 minute, then add crushed tomatoes and Italian seasoning; simmer for 5 minutes.
- Once the squash is done, flip it cut-side up and fluff strands with a fork. Pour the tomato mixture over it and sprinkle with cheese.
